Eating healthy is something we all want to do, but sometimes we find ourselves living on a tight budget and we cant always find ways to make those healthy choices that we want. Frozen fruits and veggies are a great way to get healthy and organic options without the organic price. Another option is to go for canned veggies. Make sure if you pick these to not add salt to your meal and to try to find the “low sodium” or “no salt added” options since canned foods tend to be really high in sodium which can lead to water retention, high cholesterol, and hypertension, along with a lot of other problems. If you notice that you are eating a lot of canned foods, try to make a least one meal a day come from another source, like a fruit!
Here is one Meal that I created that is made with all canned veggies and a pack of chicken.
2 16 oz cans mixed vegetables
1 16 oz can cream corn
1 8 oz can sweet corn*
1 pack of boneless chicken
1 pack of cornbread mix (plus ingredient for that mix)*
1 deep dish oven pan
Preheat oven to 375
Drain both mixed veggie cans over a sink, and then and pour into the pan. Then take the 16 oz cream corn and pour all contents into dish.
Cut chicken into bite sized pieces and then add to pan as well. Mix the chicken and veggies up really well and put in the oven to cook for 1 hour.
* While this is cooking, take your cornbread mix and ingredients necessary, follow instructions from the box or bag and prepare the batter mix. This is when I like to add an extra ingredient 1 8 oz can of sweet corn. So drain the can and add the corn.
When the chicken and veggie mix is done baking remove from the oven and pour the batter on top. Spread it out evenly and put the dish back in the oven for an additional 30 minutes or until crust is golden.
*These are all optional to add a little more pizzazz to your dish and it will help fill you up more.
