pies are fun to make and easy to serve and take to work as a lunch, but sometimes they are just too loaded with sugars and unhealthy combonations, so here is an easy-to-make healthy pie that everyone will love.
15oz ricotta cheese
8 oz mozzarella
10 frozen spinach
1 cup grated parmesan
1 cup roasted red peppers
3 tablespoon butter
¼ teaspoon nutmeg
~Melt butter in a pan, and then add onion and saute.
~Add Spinach and nutmeg. Cook until the fluid evaporates.
~Preheat oven to 350
~In a separate bowl mix together eggs, ricotta, mozzarella, and parmesan cheeses.
~Pour both mixtures into your pie dish and add salt, pepper, and roasted red peppers. Mix well.
~Place dish in oven and cook for 45 min
If you want to make this more pie like, you are more than welcome to buy a pie crust and place mixture in there, however the pie will be just as tasty without the crust.
