Slice the zucchini, and yellow squash into thin slices (not paper thin, about 1/12 the width of your pinky), then slice your onion the way was as you did the zucchini and squash and then once in half.
Personally I like small tomato chunks, so I diced mine into 1/8 but you can cut them up however you like. Mince your garlic, or take a teaspoon of preminced garlic.
Then throw all of this into a sauce pot. Add ½ cup olive oil, and your 16oz of Frozen Spinach.
Rosemary is hard to break up in your hands, so if you have a mortar and pestle, feel free to use it to grind up 3 pinches of rosemary. (If you do not have the mortar and pestle, you can use a glass and the back end of a large wooden spoon. Or you can just add the Rosemary without grinding it at all, however when you grind it, and break it up it helps to release the flavor.) Then add 2 pinches of Oregano, and a dash of pepper.
Turn the heat on very, very low. (like setting 1 or 2) High heat will burn your veggies, and ruin the sauce. Let this sit and get warm for about 30 minutes.
Now, add the tomato sauce, and then let sit for 45 min, stirring occasionally.
While the sauces is heating up take your chicken out and add Rosemary freely (I love rosemary chicken and add about ½ tablespoon per breast, but for most people this will be an over powering flavor and will not be very pleasant, I would suggest starting with about one or two pinches) Once again you can grind the rosemary or simply sprinkle. Add you chicken to a pan and add your water and ½ cup olive oil. Then cover and set to a medium low heat (so around a 3).
Don’t forget to flip your chicken about every 10 minutes, and occasionally stir your sauce.
If you are sensitive to an acidic sauce and tend to get heartburn from pasta sauce, then add 2 pinches of sugar, but no more, this sauces is full of sweet veggies, and does not hold as many acidic properties as your traditionally made Italian spaghetti sauces.
**Take your chicken out of the pan and lay on each plate with ample rague sauce surrounding for a 5 person filling meal. A good addition to this meal would be some linguini pasta which will help to allow you to feed 3 more people for only $1.00 more. Also the rague makes a great sauce for just spaghetti as well if you do not like chicken.
