1 bag of spinach (you may use baby spinach as well, makes no diference)
2 cups shredded mozzarella
-Preheat you oven to 400°
-Take each breast and doctor it the way you like try to aim for one solid round breast rather than having too many dangling pieces. Then flatten it out as best you can and from right to left cut the chicken width wise about ¾ of the way through, like a hoagie or hotdog roll.
- Chop spinach up into small pieces and mix with shredded cheese. Then use this mixture to stuff you chicken breasts with. Use any additional cheese to sprinkle on top of chicken for added flavor
-Put chick in the oven for 40-45 min (I always over cook my chicken in fear of eating something that will make me sick)
For his recipe I used Mozzarella and spinach, however there are some other great combinations to stuff you chicken with such as:
Pepper jack and Arugula
Asparagus and Swiss
Kale and American
Tomato, Basil, Mozzarella (Here slice the tomato for width wise to make slices and I would suggest sliced mozzarella as well. If you use fresh basil, use one leaf per breast)
*Diced tomatoes can be added to any of these combinations for added flavor and stuffing.
*These are also really good on the grill, but super messy to clean off the grill when the cheese starts getting everywhere if you want to grill these cut the chicken and grill about ½ way on one side. Then remove from grill, add your stuffing, and place back on grill on the other side to finish cooking. I would also suggest not over stuffing when grilling.
