I have decided that every month I will post a new recipe for you all to try out as well as update my yoga video for you all to help keep the page new and fresh. This month I have a Chicken Veggie Mix. I am sorry guys I am really bad at coming up with names and I am not sure if somewhere along the lines someone came up with a similar recipe that has a cooler sounding name, but regaurdless of the pizzazz with names and what not, this is not only a delicious dish, but it is super good for you too.
Chicken Veggie Mix
7.75 oz can of chickpeas
5 small red potatoes
5 heaping handfuls of chopped kale
1 pound chicken strips
3 medium carrotts
1 small yellow onion
2 pieces of garlic
2 teaspoons of soysauce
~Drain can of chickpeas (garbonzo beans) and place in pan with chopped onion. Finely chop one piece of garlic and drizel about 1 table spoon of olive oil on top of it all. Cook for about 5 minuts, or unti l Chickpeas start to pop.
~Remove these items from pan and put in large serving pan.
~Using original pan chop potatoes, and carrotsand put in pan with about 1 table spoon of olive oil and cook for about 5 minutes, or until potatoes have almost reached desired softness. Add Chopped Kale and let sit for 5 more minutes with lid.
~Remove thses items from pan and add to large serving pan with chikpeas and onion.
~Take chicken strips and cut width wise into thirds. Finely chop second piece of garlic (you may add more garlic. Add about 1 table spoon of olive oil and 2 teaspoons of soysauce and cook for about 15 minutes or until your chiken is cooked through.
~Remove these items from pan and add to large serving pan with other items.
When ready to eat heat on low heat for about 5 minutes and dig in!
PS Im not sure if any of you have picky eaters for children, but my daughter is so much so that she has learned how to make herself puke from burping when she doesnt want to eat, right, and she ate this one up so I must have done a pretty amazing job with this one!!!
